HEAD CHEF

An exciting opportunity is available for a highly qualified chef looking for a new challenge and lifestyle opportunity.

Blue Wren Farm in Mudgee NSW is under new ownership, with a restaurant concept scheduled to open in mid 2021. We are looking for a highly skilled chef with proven creative and operational success to lead the kitchen and become an integral part of this exciting new concept.

This role would suit an ambitious chef looking to make their mark - it’s a unique opportunity for you to put your name out there, draw visitors far and wide to the region and take your career to the next level.

  • Full time opportunity, 5 days per week, no nights required
  • Working alongside the creative director to create an interesting and popular menu, focusing on seasonality, local produce and the region
  • Effective and efficient running of the kitchen
  • Training, development and performance management of staff
  • Inspire, lead and energise your team to be their best
  • Create and maintain high standards, policies and procedures
  • Delivery of breakfast and lunch service 5 days per week (Thursday - Monday) open to the public
  • Delivery of ticketed ‘showcase’ events throughout the year
  • Note: this role is not responsible for the catering of weddings held on the property. Wedding catering is managed by external caterers and uses a separate commercial kitchen on the property.
  • Experience working as a sous chef level or higher
  • Driven, ambitious and committed to making the concept a success

  • Have the ability to relocate to Mudgee NSW if required
  • Highly proficient in menu planning, production and costing
  • Must be an Australian Citizen or hold a Permanent Resident Visa

  • Full time opportunity, 5 days per week, no nights required
  • Head Barista role managing the production of speciality coffee, teas & hot chocolate
  • Long term full time opportunity
  • Managing staff to ensure seamless service of coffee
  • Ordering responsibilities, stocktake and management of the coffee section
  • Create and maintain high standards, policies and procedures
  • Delivery of breakfast and lunch service 5 days per week (Thursday - Monday) open to the public
  • Note: this role is not responsible for servicing weddings held on the property. Wedding catering is managed by external caterers and uses a separate commercial kitchen on the property.
  • Strong barista experience working with specialty coffee in a fast paced environment
  • Must be confident with your palate, be able to make grinder adjustments, create beautiful milk texture, have strong art skills and an eye for detail
  • Proven ability to work efficiently, calmly and confidently under pressure with high volumes
  • Hold a positive attitude and a genuine commitment to the customer experience
  • Willingness to help out in other ways during quieter periods

  • Proven ability in leading and managing staff
  • Hold strong knowledge and understanding about food and wine
  • Proven ability to work efficiently, calmly and confidently under pressure with high volumes
  • 'Hands on' managerial approach with a participative leadership style
  • A deep understanding of genuine hospitality and service excellence
  • Previous experience working as a barista will be highly regarded
  • Willingness to help out in other ways during quieter periods

  • High level interpersonal skills, and excellent verbal and written communication skills

Blue Wren Farm is a working property situated in the heart of the Mudgee wine region. Set on 50 acres of prime land located in Central West NSW including a vineyard and a cherry orchard, Blue Wren Farm is known as one of the regions premium wedding and events venues, with onsite boutique accommodation.

The property is set to launch a retail concept in mid 2021, offering breakfast and lunch 5 days per week, great coffee, and a carefully curated beverage list featuring local and regional wines.
